French toast is a staple breakfast item, especially when paired with high protein toppings.

This recipe is great way to use up bread on hand, to make a quick & easy breakfast that can be meal prepped!

Protein French Toast
Equipment
- stainless steel pan (I love these Tramontina ones)
Ingredients
- 2 slices ezekiel bread (amazing natural bread full of nutrients)
- 2 eggs (I love pasture-raised)
- 1 tsp sugar-free brown sugar
- dash of sea salt (I love Redmond's)
- dash of vanilla extract
- dash of cinnamon
- 1 tbsp butter (I love using grass-fed)
Optional Toppings
- non-fat plain greek yogurt
- sugar-free maple syrup
Instructions
- In a bowl, whisk until fluffy: 2 eggs, 1 tsp sugar-free brown sugar, dash of vanilla extract, dash of sea salt.
- Place one slice of toast into the mixture and let soak for 1-2 minutes. Flip and let the mixture soak for the other side.
- Heat the pan to medium-low heat and add 1 tbsp butter.
- Place one slice of coated toast in the pan. Cook for 2-3 minutes per slide and flip.
- Repeat coat and cooking process in steps above, for the other slice.
