Gluten-Free Protein Pancakes
Equipment
- stainless steel pan (I love these Tramontina ones)
Ingredients
- 2 eggs (I love pasture-raised)
- 1 banana
- dash of sea salt (I love Redmond's)
- dash of cinnamon
- 1 scoop whey protein powder
- a dash of baking powder
- 1 tbsp coconut oil
optional toppings
- non-fat plain greek yogurt
- sugar-free maple syrup
Instructions
- In the blender, add: 2 eggs, 1 banana, a dash of sea salt, a dash of cinnamon, 1 scoop whey protein powder, a a dash of baking powder. Blend until it becomes a smooth pancake batter consistency.
- Heat the pan to medium-low heat and add 1 tbsp coconut oil.
- Cook each side of the pancake for around ~2-3 mins per side and flip.
