Ingredients

  • 2 eggs (I love pasture-raised)
  • 1 banana
  • dash of sea salt (I love Redmond's)
  • dash of cinnamon
  • 1 scoop whey protein powder
  • a dash of baking powder
  • 1 tbsp coconut oil

Instructions

  • In the blender, add: 2 eggs, 1 banana, a dash of sea salt, a dash of cinnamon, 1 scoop whey protein powder, a a dash of baking powder. Blend until it becomes a smooth pancake batter consistency.
  • Heat the pan to medium-low heat and add 1 tbsp coconut oil.
  • Cook each side of the pancake for around ~2-3 mins per side and flip.

Notes

You can also substitute the coconut oil for grass-fed butter or spray avocado oil.
This recipe will yield around ~3-4 normal sized pancakes.
